|Ingredients:||1 or 2 containers of fresh mushrooms
1 small jar of pimentos
1 small can of black olives
1 small tin of anchovies
broth of your choice (chicken, beef, vegetable)
|Preparation:||De-stem the mushrooms. You can save the stalk of you want to include it in the stuffing (optional).
Chop pimentos, black olives, and anchovies (not too many, just two or three ought to do the trick).
Place chopped pimentos, black olives, and anchovies (and optional chopped mushroom stems) into a bowl.
Add paprika for color and a pinch or two of crushed black pepper. Mix until mixed well.
Stuff mushrooms with mix. Place in low flat pan.
Add broth of your choice to pan. Don't drown the 'shrooms, just put enough so they won't dry out while baking.
Heat oven to 400-450.
Bake until done. You'll know when.
