Ingredients:Leaves from 2 small bunches of beets. (Serve beets within a few days, but
use the green first or they'll wilt in the fridge.)

1 Tbsp butter
1 Tbsp olive oil
2 cloves garlic, minced
1 Tbsp ginger, minced
1/3 c orange juice
1/2 tsp salt
Preparation:Wilt the greens in a skillet 2-3 minutes. They should collapse, but not be
mush. Transfer to a colander and drain. Wipe skillet clean, and saute
everything but the orange juice and greens until fragrant. Add the orange
juice and crank the heat. It should get glazy in 1 minute or so. Toss the
beet greens and serve.
