|Ingredients:||1 sole fillet per person
1 leaf of spinach per fillet, stem removed
cream cheese as needed
cooked shrimp as needed
|Preparation:||Top each sole fillet with a leaf of spinach.
Spread a layer of soft cream cheese on the spinach.
Press in a small handful of cooked shrimp meat atop the cream cheese
Roll up and secure with toothpick.
Bake until done, abouthalf hour at 350 I think???
|Notes:||If you wanna get real fancy, stir up a light tarragon butter cream sauce to top the rolls upon serving. If not, serve with fresh lemon wedges.
