Ingredients:1/4 c balsamic vinegar
3 Tbsp water
1-1/2 tsp olive oil
1/4 tsp salt
1/4 tsp pepper
1 large clove of garlic, minced
1/2 c small broccoli flowerets
1/2 c julienne cut carrot (matchsticks)
1/4 c julienne red bell pepper
[an enourmous amount of sliced mushrooms]
4 c farfalle (bowtie) pasta cooked without salt or fat
2 Tbsp thinly sliced fresh basil
1/4 c (1 ounce) graged Asiago cheese (I have used mysithra or parmesean)
Preparation:Combine vinegar and next 5 ingredients in a jar. Cover the jar and shake
it vigorously. Set it aside.
Drop broccoli, cauliflower, and carrot into large saucepan of rapidly
boiling water and cook it for 30 seconds. Remove it from the hot water
and drain or pour the hot water from the pan. Pour cold water over the
vegetables to stop the cooking process. Drain.
Combine drained vegetables, bell pepper, and the last 4 ingredients in a
large bowl. Add the vinegar mixture and toss it gently. Cover, chill
and eat. This is one of those dishes that gets better as it sits. The
vinegar mixture makes a terrific salad dressing or mushroom marinade or
both.
