Ingredients:5 chicken breasts, cubed
3 onions, chopped
1 tsp cinnamon
1 bay leaf
3 cloves garlic
1/4 tsp ground ginger
1 tsp paprika
3 Tbsp curry powder
1/2 tsp white sugar
1/2 tsp cayenne pepper (depending on my mood I'll adjust this qty)
2 Tbsp tomato paste
salt to taste
1/4 c olive oil
water to cover
Preparation:Fry onions in olive oil until browned. Add cinnamon
and bay leaf. Continue stirring and add ginger,
paprika, curry powder, sugar, salt and garlic. Continue
stirring 2 minutes. Mixture will become like a paste.

Add chicken pieces, tomato paste and cayenne pepper. Add
enough water to just cover the chicken. Simmer in
crock pot few hours until chicken is done.
Notes:This chicken curry recipe I particularly like because it doesn't have dairy or coconut milk in it, which is particularly great for the diet. I found it on AllRecipies and adjusted the quantities and ingredients. As the one of the reviews said, "it will leave your house smelling like curry for days."
