|Ingredients:||4 strips of bacon
1 medium onion, chopped
1 or 2 cans of tomatoes
2 Tbsp corn starch
|Preparation:||Brown bacon and onions, add tomatoes, simmer for 30 min.
Add corn starch as thickener. Simmer until thick.
|Notes:||Just finished the last of the rice and tomato gravy from New Year's Day dinner. A tradition in Kevin's family is a southern style dinner on New Year's Day including black eyed peas for good luck.
Black eyed peas
Rice and tomato gravy
My favorite was the tomato gravy.
I'm sure you can tweak it many different ways. I saw celery and ground pepper in the gravy I finished. I've also seen a recipe with green pepper.
Pouring a can of Coke over a ham before cooking it in the oven makes the ham real juicy. Put slices on the top of the ham before pouring the Coke so it gets into the meat.
