Description:This is a very "guy" recipe for salsa verde - YMMV ratio-wise Posted:2007-02-12
Key words:tomatillo chili Category:Sauces
ID:807 Updated:2007-02-12 05:34:26
Ingredients:10 tomatillos (husked and rinsed)
3 dried chilis california
1-2 cloves garlic, minced
1/8 cup sliced onions
Salt and pepper to taste
Preparation:Place the tomatillos in a saucepan and just barely cover
with water, or place them in a double boiler add the chilis
california. Boil/steam the tomatillos and peppers until the
peppers are soft. Remove the tomatillos and peppers and
place in a blender, reserving the water from the
boiling/steaming process.

Add the remaining ingredients, and blend on high speed. If
the salsa is too thick, add a little of the water from the
pan. Wait until everything is blended until doing so - the
tomatillos hold a LOT of water. Check for taste, and add
salt, pepper, or more chili's as needed. Chill and serve.
