|Ingredients:||1 lb chicken, parboiled, deboned, and chunked
2 C small white beans, soaked overnight or boiled 5 mins and soaked 1 hr
1 large chopped onion
3 cloves garlic (more if you like garlic)
3-5 serrano peppers, to suit burn tolerance, chopped
1 T cumin
1 t coriander
1/2 t ea. white pepper, galangal, oregano (all ground...)
1 bunch cilantro, chopped
|Preparation:||Chop up the onion and garlic and saute in olive oil until just translucent.
Add the beans, chicken and spices (leave the cilantro out until the last few minutes)
Bring to a boil and simmer 1 hour or until the beans are tender.
