|Ingredients:||1 c cream (English double cream is the best, but you can make do with what you got)
A generous amount of Cream Sherry
4/5 nice mushrooms
1 small onion, chopped
some olive oil & butter
4/5 pieces of chicken
dashes of your favorite spices (I normally use garlic [bit more than a dash at that] and salt)
|Preparation:||Fry the chicken, putting some spices on it in some oil and butter (I tend to use just enough oil to keep the butter from burning and give an even coat to the pan).
While the chicken is cooking, in some more butter and oil, fry the onion, then add the mushrooms. After they are brown, add the Sherry and the cream.
Then pour the sauce over the cooking chicken, allowing to simmer for as long as you can hold out. Serve with rice or potatoes, the sauce makes a nice 'gravy'....
