Ingredients: | 6 c stock
1 c polenta 1/4 lb butter 4 oz gorgonzola cheese 1/2 c heavy cream 1/4 tsp ground nutmeg Salt & pepper to taste 4-6 red peppers, cut in half 1 head of garlic 1 2-oz can Progresso tomatoes with basil (crushed) 6 oz tomato paste 1 tsp sugar 1 tsp balsamic vinegar 1/2 tsp dried oregano 1/4 c red wine (optional) fresh basil asiago cheese |

Preparation: | Bring stock to boil, add polenta (whisking like a mad dog), cook until done (about 8-10 minutes). Add butter whisk until incorporated; add remaining ingredients.
Roast and peel the peppers. Roast 1 head of garlic, mince same. Make a marinara sauce with it and the remaining ingredients. Top the polenta with roasted red pepper halves, gently ladle marinara sauce into the pepper halves, sprinkle fresh basil and asiago cheese over. |
