Ingredients: | 2 c of your favorite broth or water
2 medium carrots, sliced 1 stalk of celery, sliced 1.5 c cut green beans 1 medium onion, chopped 1 large clove of garlic, minced 1 c peas 1 c whole kernel corn 1 - 2 14.5 oz cans of stewed or whole tomatoes with juice Black pepper other herbs and spices to taste |
||
Preparation: | Bring broth (or water) to a boil, adding your favorite vegetables starting with those that require the most cooking time. Add in quantities to suit your
taste. Add meat, and season to taste. |
||
Notes: | I use fresh vegetables as much as possible. For convenience and avail-
ability, I use canned tomatoes and frozen peas and corn. Fresh will also work, but you will need to add more water/broth if using fresh tomatoes. The corn has the tendency to make the soup sweet, so adjust according to your tastes. Zuchini or certain types of squash might be good in this soup. |
