Ingredients: | 2 Hillshire Farms Polska Keibasa Lite sausages, sliced & quartered
1 green bell pepper, diced 2 red bell pepper, diced 1/2 yellow onion, diced 2 green onions, sliced 3/4 lbs of your favorite mushrooms, sliced 3 large cans tomato sauce 1 8 oz can Contadina tomato paste Fresh Oregano 1 clove garlic salt/pepper to taste |

Preparation: | Put the tomato sauce and paste in a large crock pot or whatever will hold all this. Get the sauce warming on low heat. This is when I usually add a little garlic, oregano, salt and pepper and get the sauce stirred up.
Slice and quarter the sausage and add to the sauce. This is already cooked so pre-cooking is not necessary. Dice the peppers and onion and slice the mushrooms and green onions. Prepare a large frying pan with a good oil (I use a canola oil), pressed garlic, a little extra oregano and a little salt. Saute the peppers, onions and mushrooms until the onions are transparent. Add the sauted veggies to the sauce and simmer the whole lot for a couple hours. |

Notes: | Prepare your favorite pasta (I used two 1 lb packages of thin spaghetti), garlic bread and salad as desired.
This will serve about 10 (two of whom are very large football players) and have a little left over. If you are entertaining normal folks, you can probably feed 14 with this recipe. |
