Ingredients:1 lb matsutake, or
1 lb "white chanterelle" or "American matsutake", stems cut off

1/4 c sake or shao sing rice wine
1/4 c soy sauce
Preparation:Slice mushrooms 3/8" thick. Combine wine and soy sauce, toss mushrooms
gently to coat, microwave two minutes on high in two batches in a single
layer; gobble enthusiastically.
