Ingredients: | 3 lbs Flank or round steak, cut in dime sized cubes
1/4 lb beef suet 3 large garlic cloves, finely chopped 4-6 Tbsp Pure chili power 8 Tbsp Masa Harina 6-8 c beef broth 1-1/2 Tbsp oregano 2 Tbsp cumin seed 2 Tbsp vinegar salt & pepper cayenne pepper |

Preparation: | Render the suet and discard the solids.
Lightly brown the meat in rendered fat. Add garlic, chili powder, oregano, cumin, salt & pepper. Cook, stirring for a few minutes to blend. Sprinkle the masa around, stir. Add 6 c of beef broth and vinegar. Simmer partially covered for 2 hours, skimming fat. Add additional beef broth if too thick. Serve, with chopped onions, cheese, and ranch, pinto or BBQ beans on the side. |
