Ingredients: | 2 large mangos
1/2 medium cucumber, peeled, seeded, and diced 1 jar roasted red peppers chopped OR 1/2 jar + sweet red pepper, diced thinly 1 Jalapeno pepper, seeded and diced 1/2 red onion, diced in 1/4" pieces 1/4 chopped cilantro or parsley Juice of 1 lime 1 to 1-1/2 Tbsp Rice Wine Vinegar OR 3/4 Tbsp red wine vinegar |

Preparation: | Peel mangos and chop in 1/4" pieces. Combine everything. Let sit at room
temperature for 1/2 hour. Put heaping tablespoon on each fish steak. Serve the remaining salsa at the table. |
