Ingredients: | 2 lbs ground meat (venison, beef, turkey)
4 slices salt pork 1-2 cans tomatoes, whole or diced (usually 2 cans) 1 large onion, diced 1 clove garlic, minced 4-5 jalapenos, chopped 4 Tbsp chili powder 1/2 tsp oregano 1/2 tsp ground cumin 2 Tbsp dried chili pepper flakes Salt, pepper, water, and beans if wanted |

Preparation: | Brown salt pork in large deep iron skillet.
Add meat and onion, brown quickly and cook 30 minutes. Add tomatoes, seasonings, pepper and salt, mix well. Reduce heat and simmer 2 hours. Add water if necessary. Refrigerate overnight and serve the next day. Add beans if desired when reheating. |
