Ingredients: | 6 # English Light Malt Extract Syrup
2 # Dry English Light Malt Extract 1 # crushed Amber Crystal Malt 2 t gypsum 1/8 t espom salts 1/2 t irish moss Bittering hops -- 2.7 oz Kent East Golding Aroma Dry hops -- 1 oz Kent East Golding Use a good english liquid ale yeast. 3/4 cup corn sugar 1/2 t ascorbic acid |

Preparation: | Steep (make a tea) crystal malt. Strain it and add to water for boil. Boil
water and malt syrup for 1 hour. Boil for 1 hour. Add hops at 20 minutes. Add irish moss at 30 minutes. At end of boil, move pot off stove. Add dry hops and cover. After fermination, mix in corn sugar and ascorbic acid, then bottle. Some use 2-8 oz oak toasted chips in fermentor. I haven't tried that yet. |
