Ingredients: | 6 # Weizen malt extract syrup
2 # Dry Weizen malt extract 1 # Dry American Dark malt extract 1 t gypsum a few grains of epsom salts 1/2 t irish moss 24 grams or .86 oz Tettnanger Hops (1 oz if using mixed wheat beer yeast) (I based this on the alpha content of the hops) Yeast: Use a wheat beer yeast. Carbonation 3/4 cup corn sugar 1/2 t ascorbic acid |

Preparation: | Boil for 1 hour. Add hops at 20 minutes. Add irish moss at 30 minutes. Mix
sugar and C for carbonation. |

Notes: | WHEAT BEER YEAST COMMENT: Traditional wheat beer yeast is a delbruckii
yeast. It produces a very sour taste, much like when one adds lemon juice to wheat beer. Modern cmmercial wheat beers yeasts mix half delbruckii and half ale yeasts. If that is the kind of yeast you will be using, increase the hops. |
