Ingredients: | 6 # Wheat xtract syrup
1 # Dry Weizen malt extract 1/2 - 1 # mild honey 1/2 tsp gypsum 1/2 tsp irish moss 20 grams tettnanger hops (use 24 grams if using mixed style wheat beer yeast) 3/4 c corn sugar 1/2 tsp ascorbic acid |

Preparation: | Boil for 1 hour. Add hops at 20 minutes. Add irish moss at 30 minutes. Use
carbonation mixture. |

Notes: | WHEAT BEER YEAST COMMENT: Traditional wheat beer yeast is a delbruckii
yeast. It produces a very sour taste, much like when one adds lemon juice to wheat beer. Modern commercial wheat beers yeasts mix half delbruckii and half ale yeasts. If that is the kind of yeast you will be using, increase the hops. |
