Ingredients: | 4 good sized turnips
1/2 pint plain yoghurt 4 whole, fresh squid 1 red bell pepper 2 fresh garlic cloves, crushed 1 serrano chili a bit of salt a healthy grind of black pepper a sprinkling of thyme and oregano a splorp of olive oil a splatter of balsamic vinegar a saucerful of bread crumbs |

Preparation: | Hollow out turnips with a spoon as if you were making little turnip-o-lanterns. Collect the turnip shavings in a bowl. Chop/mash/whatever the shavings so that there are no large chunks left.
Clean squid. Cut off the tentacles just ahead of the eyes and set aside. Cut up squid steaks and add to turnip shavings (filling). Dice an appropriate amount of red bell pepper and add to filling. Clean the serrano chili, chop, and add to filling. Add the other ingredients except for the bread crumbs. Stir filling and spoon back into hollowed out turnips. Place turnips in baking dish and bake for 45-50 minutes at 400 degrees. Bread the squid tentacles and deep fry briefly. Place one tentacle florette on each turnip as garnish. Serve and duck. |
