Ingredients: | Red Beans:
3 lbs diced ham 1-1/2 c diced onion, diced 4 garlic cloves, smashed 1 stick butter 1 red bell pepper, diced 1 green bell pepper, diced 1 cup diced celery 2 jalapeno peppers, diced 4 large cans kidney beans 3/4 c chopped green onions S&P Cajun seasoning to taste Dirty Rice: 2 lbs long grain rice 12 - 16 oz chicken livers 1 c chopped green onions 1/2 stick butter, divided oil 2 bay leaves 1 Tbsp Cajun seasoning S&P |

Preparation: | Red Beans:
Saute onion, garlic, ham, peppers and celery. Add beans and cover with water, season to taste. Cover and simmer for an hour, covered. Mash some of the beans to help thicken the sauce, replace cover and cook another hour. Add green onions and final seasoning. Dirty Rice: Boil the chicken livers in seasoned water for 20 minutes, drain and cool. Chop livers and saute in 1/4 stick butter, season with Cajun seasoning. Saute rice in 1/4 stick butter and a little oil. Add bay leaves to rice, 1 Tbsp Cajun seasoning, add salt to water to your taste and 3 times water to volume of rice, cover and simmer for 30 minutes. Combine cooked rice in large bowl with sauted livers and add green onions; mix well. Serve the Red Beans over the Dirty Rice and enjoy. |
