Ingredients: | Pound a chicken breast flat (you can do it with 1/2 of a breast)
slice a clove of garlic make a square of swiss cheese about 3/4-1" on a side cut the stem off of a sprig of parsley. |

Preparation: | Carefully roll the chicken breast around the 3 things, and secure with a
toothpick or two. You should have produced a small, watertight pouch thingy. Roll said pouch in beaten egg, then in bread crumbs. Let dry long enough to make it easier to pick up. In a deep fryer with oil at about 350 degrees, drop in breasts and fry till golden brown. Check with an instant read thermometer, but they are usually quite done. While still warm, cut them open to find the melted, aromatic, way yummy filling. |

Notes: | Haven't made these for years.....it was one of the first "fancy" things I
did when we first got married (30+ years ago) I bet you could bake 'em and they'd work pretty well. |
