Ingredients: | 4 c flour
1 c cornmeal 2 Tbsp yeast |

Preparation: | Dissolve yeast in about 1-2/3 c of 105 degree water with a pinch
of sugar; let stand 5 minutes. Add to flour, cornmeal and a little salt. Knead for 10, rise for two hours next to the wood stove. Roll out into deep dish pans, let rise a second time for 1/2 an hour. During the second rise, prepare the cheese, sauce and toppings and then call in the children and let them assemble the pizzas to give them a sense of ownership...bake at 500 for 20-25 minutes. While baking, open and decant the red wine (chianti works well) and make a salad of mixed greens. |

I usually buy my muzz cheese at Sams in the five pound bag, preshredded (freezes well) and use commercial premade pasta sauce for the pizzas. Aside from additional toppings, I figure a large pie costs about $1.50 to make and most of that is the cost of the cheese. Sam's club also has Canadian bacon at $7 for a two-pound package, and I also find their Italian sausage from the meat counter does just fine as a topping as does eggplant, onions, tomatos... |
