Ingredients: | 2 Tbsp olive oil
5 cloves garlic 2 Tbsp (or more) sliced or chopped dried tomatoes, rehydrated 1 bunch of cleaned kale, stems removed salt and pepper ~1/2 c stock balsamic vinegar goat cheese, optional |

Preparation: | Heat olive oil in a cast iron pan. Add garlic and saute until translucent (NOT BROWN). Add dried tomatoes, rehydrated with a bit of warm water, plus 1 bunch of cleaned kale, chopped or slivered. (Remove stems!) Toss to coat with oil; add salt and pepper. Cook until wilted, then add ~1/2 c chicken or other stock. Bring to boil, then simmer covered until kale is tender, ~8 min. Uncover, cook off liquid at high heat, and then season with balsamic vinegar. Top with goat cheese if desired. (I skip that.) | ||
Notes: | GOOD kale can be cooked much less, but make sure you've washed and cleaned
well, and that you've removed the stems. |
