Ingredients: | 1 bunch mizuna or other mustard greens
4 oz Somen noodles 2 tsp peanut (or other) oil 6 oz mushrooms, optional 3 Tbsp minced fresh ginger, divided 2 cloves minced garlic 1/4 tsp red pepper flakes 2 c broth (chicken, etc.) Mustard greens 6 oz good quality steak, sliced very thin, optional 2 Tbsp Soy Sauce 2 tsp balsamic vinegar sesame seeds |

Preparation: | Clean and chop mizuna or other mustard greens.
Cook Somen noodles and toss with peanut (or other) oil. Set aside. Saute: mushrooms (optional) Add: half of the minced ginger minced garlic red pepper flakes Saute briefly, then add: broth (chicken, etc.) mustard greens Bring to a boil, then simmer about 8 minutes. (I find less is fine for nice mizuna.) Turn off heat and add: 6 oz good quality steak, sliced very thin (optional) soy sauce balsamic vinegar rest of minced ginger Portion into four bowls and add somen noodles to each. Sprinkle with sesame seeds. |

Notes: | Note: this is the original recipe. I leave out the mushrooms, beef,
vinegar, and reduce the ginger a bit for the kids. It's still a really hot dish, but delighful with something like sushi. |
