Ingredients:3/4 lb cracked wheat
1 qt water
1 qt milk
salt to taste
Preparation:Bring the water to a boil.
Add the cracked wheat and cook for ~25 minutes (the water will be mostly absorbed by this point).
Add the milk slowly.
Cook for another half hour.
Notes:Probably derived from Apicius, though I don't remember for sure. Historical note: this continued to be served in Medieval Europe, as "Frumenty".
