Ingredients: | 2 carrots
2 pieces celery 1/2 yellow onion 1 chicken breast & 1 thigh 1 can Campbell's cream of chicken soup touch of basil and tarragon Batch of rolled biscuits from instructions on Bisquick (tm) box olive oil 1 additional cup Bisquick 1/2 c milk 1 xl egg |

Preparation: | Cut up vegetables and steam to taste.
Bake chicken until done, remove meat from bone and dice. Combine veggies, chicken, soup, herbs and simmer. Follow directions for rolled biscuits; I don't have a roller, so I just sprinkled it with lots of flour as I rolled it and flattened... Place dough in a 4" deep, 6"x9" casserole dish, brushed with olive oil; put it in the oven at 350, 10 min. Remove the dish from oven as the thin 'crust' begins to harden/rise slightly. Place the creamed vegetables/chicken in the dish and mixed up 1 cup bisquick/ 1/2 cup milk and 1 xl egg, poured over the top of everything. Bake for 30 minutes. And it came out golden brown on top... steaming on the inside... |

Notes: | Sunday, after a 1:00 PM hoops game, I called my daughter and we spent the rest of the afternoon, decorating the tree... a very nice Joshua/Jack Pine-clumps of long needles type.
To prepare a Sunday dinner, hearty fare for the season, I looked at the back of the Bisquick(tm) box, hmmm, Easy Chicken Pot pie. Well, of course it's easy, there's no pie crust, egad, 1-1/2 cups yeeesh frozen mixed veggies? phffftt. I used fresh.. Next time, I'll add green beans when in season, maybe a half can of corn. That'll work. |
