Ingredients: | 6 oz skinless Dorado
1 Tbsp each, Diced: 6 oz skinless red bell pepper green chili tomatillo red onion tomato 1/2 Tbsp chopped cilantro 1 tsp rancho casera sauce Juice of 1/2 lime 1/2 Tbsp white wine salt and pepper |

Preparation: | Preheat ovem to 400 deg F.
Salt & pepper Dorado and place on a buttered baking boat/dish. Mix in a bowl the remaining ingredients except for the wine. Mound the mixture on top of the Dorado and sprinkle the top with the white wine. Bake for 12-15 minutes at 400 deg F. |
