Ingredients: | 1 c long-grain rice, cooked and cooled
1/3 c fresh lime juice 2 Tbsp olive oil 2 tsp molasses 2 cloves garlic, finely chopped 1 jalapeno pepper, seeded and chopped salt and pepper 15 oz canned black beans, rinsed and drained 1/2 c scallions, chopped 7 oz bell pepper, roasted 1/3 c fresh cilantro, chopped 1 lb chicken breast halves 1 Tbsp olive oil 1/4 c pickapeppa sauce |

Preparation: | Set cooked rice aside. In a large bowl, whisk together lime juice, olive oil, molasses, garlic, and jalapeno. Season with salt and pepper. Add beans, scallions, roasted bell peppers, cilantro and the cooked rice. Set aside.
Meanwhile preheat the broiler and broiler pan. Brush chicken with 1 tablespoon olive oil and broil, basting with pickapeppa sauce, until the meat is no longer pink in the center (4 minutes per side). Cut the chicken into thin slices. Add to the rice mixture. Add salt and pepper to taste. Serve over rice. |
