Preparation: | J wanted a burger last night, which I haven't cooked in years. So I
decided to go for it. Started by slicing a bunch of very thin shavings from a frozen chunk of natural bacon ends and cooking those crispy. Mixed the garlic and the chopped leeks with the ground chuck and a bit of salt and pepper. Left a bit of bacon fat in the pan and cooked the burgers on very high heat until very brown on all sides, then low until J's was well done. Set mine on it's side at the edge so it would stay a bit pink. Put them on soft toasted buns with melted Tillamook cheddar for me, pepperjack for her, a pile of the bacon shavings, and all the desired fixings, including lettuce from the garden. I'm not a big burger fan, but I have to say that this was one of the best things I've ever eaten. |
