Preparation: | Preheat oven to 350 degrees.
Take one frozen rack of beef back ribs... and I used a cleaver to whack 'em in half so they would fit in a large corning-ware dish I have. Baste with whatever is in your fridge. I used soy sauce, barbeque sauce (longhorn), and some A-1... it was enough to keep the meat from drying out. bake 'em, to thaw 'em while the first half is going on... At halftime... cook up some fried rice and almonds, and warm up a can of black beans w/various home-canned jalapenos. While the rice is going on, slice the ribs into individual pieces and baste with sweet hot mustard, put em back in the oven and go to 400 deg, so the ribs will start to shrink back on the bone. When the rice is done, and the black bean/peppers are done, remove the ribs from the oven, turn the oven down to 325 degrees or so. Lay the ribs on edge, fill in around them with the rice and then fill in with the black beans, cover and bake for 30-45 minutes. |
