Name:Barbecued Cornish Hens Contributor:Francesca Wainwright
Description:Little chickens, ala 'Cesca Posted:1995-02-06
Key words:hen, cornish game Category:Main Dishes
ID:468 Updated:2005-11-27 19:17:29
Ingredients:4 Cornish hens, about 3/4 lb each, split in half (I'll be hungry,
after the long ride)
Salt and freshly ground pepper to taste
1 tsp ground cumin
1 tsp ground coriander
2 tsp fresh rosemary leaves, chopped, or 1 tsp dried
2 tsp fresh thyme leaves, chopped, or 1 tsp dried
2 tsp garlic, chopped fine
2 tsp olive oil
2 Tbsp melted butter, if desired
2 Tbsp chopped parsley or chervil, if desired
Preparation:1. With meat pounder or mallet (or golf club?), pound hen halves to
flatten.

2. Combine spices and herbs, except parsley, and blend well.

3. Rub the hens on both sides with the mixture and let stand 10 to
fifteen minutes.

4. Place on the grill, skin sides down. When skins are nicely browned,
turn the hens and cook for about 15 minutes more, brushing with oil every 5
minutes. Then turn over onto the skin sides for about 5 mintes, or until
done.

5. If desired, pour on melted butter, sprinkle with fresh parsley and
consume.
