Ingredients: | Seasoning mix:
2 tsp salt 1 tsp cayenne 1 tsp ground coriander 1 tsp ground fennel 1 tsp garlic powder 1 tsp onion powder 1 tsp ground turmeric 1/2 tsp ground cumin 1/2 tsp black pepper 1/2 tsp white pepper 1/2 lb dried chickpeas (I've used canned in the past) 2 whole bulbs of garlic (or more! You want at least 40 cloves ;-) 1/3 c toasted sesame seeds 1 c olive oil 2 Tbsp tamari (Japanese soy sauce) 3 Tbsp balsamic vinegar 1/2 c honey juice of 2 lemons |

Preparation: | Makes about 3.5 cups. tsp = teaspoon, Tbsp = tablespoon
Day 1: Soak chickpeas overnight. Day 2: Drain but don't rinse chick peas. Roast the whole heads of garlic (fire roasting ideal, else in hot oven, 500 F!). Plunge garlic into ice water and then peel/squeeze into blender. Toast sesame seeds (hot skillet or on a baking sheet) until golden brown. Puree chickpeas with seasoning mix, garlic, oil, honey, vinegar and lemon juice. |
