Ingredients: | 4 medium zucchini, sliced thin (1 quart)
1 small green pepper, chopped 2 small onions, sliced thin 4 tsp pickling salt 2 tray of ice cubes 3/4 c sugar 3/4 c white vinegar 1 tsp dillweed 1 tsp mustard seed 1/2 tsp celery seed |

Preparation: | Put zucchini, pepper, onions, salt and ice cubes in a large mixing bowl.
Let stand at room temperature 3 hours; drain well. In kettle, bring to boil sugar, vinegar and seasonings; add vegetables and heat just to boiling. Ladle into 4 hot sterilized 1/2 pint jars, leaving 1/2" head space; seal at once and process in boiling-water bath for 5 minutes. Let stand for 3 weeks before serving. |
