Ingredients: | 2 Tbsp vegetable oil
2-3 Tbsp tomato paste 1 can kidney beans (you can substitute black beans for a more Cuban flavor) 2 c rice 4 c water (use the bean liquid + water to = 4 cups) 1 tsp vinegar onion, about 1/2 a yellow 2 garlic cloves or 1 tsp prepared garlic green pepper, about 1/2 a green pepperoni or ham for seasoning salt |

Preparation: | Dump everything into a pot.
Bring to a boil on high. Boil 5 minutes. Cover and cook on low for 25 minutes. After about 20 mins, stir and let finish. Garnish serving with a bit of olive oil. For the Cuban touch, sprinkle some fresh minced onion and garlic on top. |
