Ingredients: | 2 c MIX
2 Tbsp sugar 1/4 c milk 1 egg optional: 1 Tbsp melted butter sugar and cinnamon |

Preparation: | Preheat oven to 425F.
Beat egg with milk. Add remaining ingredients, stir 'til just blended. Turn onto floured waxed paper and knead 20 times. Pat into a greased, 8 inch layer pan. Optionally: brush with 1 Tbsp melted butter, sprinkle with sugar and cinnamon to taste. Bake at 425F for 15 minutes. |

Notes: | Strawberry Shortcake:
Quarter scone, or bake smaller ones. Split scones, top the bottom with sweetened strawberries, the top of the scone, more strawberries, and whipped or whipping cream. |
