Preparation: | Bought a turkey breast tenderloin
Butterflied it and flattened it with a meat hammer Spread it with a mixture of ricotta, toasted pignolas, chopped green onion, garlic, basil & dill Laid out 5 asparagus spears lengthwise on it Rolled and tied it up Barded it with 3 slices of bacon Roasted in my meatloaf pan it at 350degF for 45 minutes. (Should've taken it out at 30, it was a little overdone but not excessively.) Served it with a Caesar salad and a spiffy wine called "Menage a Trois" (3 kinds of grape blended, 45% Chardonnay, 38% Muscat Canelli & 16% Chenin Blanc). Yummy, and Atkins-safe for my sweetie! :D |
