Ingredients: | 2 ripe avocados, diced
1/4 of a large mango, diced 1/2 of tomato, diced 1/4 diced red onion 1 handful of cilantro washed & chopped 1 Tbsp sour cream 1 Tbsp salsa 2 medium pickled jalapenos, diced cumin, salt and pepper (black and white or whatever you have) to taste |

Preparation: | Combine all ingredients and mash and stir to your desired consistency.
I hold a handful of cilantro by the stems and cut the main leafy parts off the stems, discarding the bulk of the stems. I then chop the remaining leaves and stems a bit, but you should still be able see recognizable cilantro leaves. There is the temptation to keep chopping until you have a board full of green mush, but I find that if you leave it in larger, leaf-sized chunks you get better cilantro flavor in the final dish. The greater the green stain on your cutting board, the less cilantro flavor you will have in the dish. |
