Ingredients:3 c sliced carrot
4 c water, divided
3 c sliced parsnip
1 c skim milk, divided
1 Tbsp plus 1 tsp reduced-cal margarine, divided
1/2 tsp vanilla extract
2 tsp sugar
1/4 tsp salt
Preparation:In 2 c water, bring carrots to boil 35 min until very tender, drain, set aside.

In 2 c water, bring parsnips to boil 20 min until very tender, drain, set aside.

Place carrot, 1/2 c milk, 2 tsp margarine, vanilla in food processor or blender. Blend till smooth.

Place carrot mixture in saucepan and heat on med low 5 min until heated. Set aside, keeping warm.

Rinse food processor or blender.

Place parsnip slices, remaining 1/2 c milk, remaining 2 tsp margarine, sugar, salt in food processor or blender. Blend till smooth.

Place parsnip mixture in another saucepan and heat on med low 5 min until heated.

Spoon carrot mixture on one side of serving bowl.

Spoon parsnip mixture on other side of serving bowl.

Pull rubber spatula through mixtures to create marbled pattern.
