Ingredients: | 3-4 heads garlic
8 oz Chevre Cheese (Goat Cheese) 2 oz unsalted butter 3 Tbsp cream sherry salt and pepper to taste |

Preparation: | First bake 3 or 4 heads of garlic. Cut off about the top 1/3, so the cloves are exposed. Smear a little olive oil on them, and bake in either a covered bake dish or just wrapped in foil, at 250 degrees for 2 hours. When done, squeeze the bottoms and the cloves should pop out the top.
The rest is easy. Put the garlic in a food processor or blender with the chevre cheese (goat cheese), butter, cream sherry and salt and pepper to taste. Blend till smooth, then put it in a container lined with plastic wrap. (Use a bowl, a bake pan, or a jello mold.) Refrigerate for 2 hours, turn upside down to unload, and serve. |

Notes: | I made this the other day. I used Feta cheeze rather than Goat Cheese. I found it quite tasty. My garlic heads were a bit large. From an eyeball perspective, I suspect it was about 25-30% garlic. Ordinary people really noticed that. I simply found it tasty.
I think the sherry provides liquid for the blenderizing. |
