Ingredients: | 8 Fish fillets (Chilean sea bass, Dorado [Mahi Mahi], Red Snapper)
1 Green bell pepper 1 Red bell pepper 1 Pasilla pepper 4-6 Tomatillos 1 Red onion 3/4 C Loose-packed cilantro 1/2 tsp Cumin powder 1 tsp Chili powder Juice of 1 lime |

Preparation: | Julienne all vegies (2" long), chop cilantro (coarse), add spices and
lime juice. Mix well and let stand for as long as you can. Butter a baking pan, salt & pepper fish, place fish in baking pan and top with a handful of the vegi mixture. Bake at 400 for 12 - 15 min (dependent on thickness of fish). |

Notes: | I like to serve this with boiled red potatoes, coarse chopped, with
butter, S&P and chopped green onions - topped with a Chipotle cream sauce. Or, you could make Mexican rice. Add a salad and you're set to go. |
