Ingredients: | 4 strips of bacon
1 medium onion, chopped 1 or 2 cans of tomatoes 2 Tbsp corn starch |

Preparation: | Brown bacon and onions, add tomatoes, simmer for 30 min.
Add corn starch as thickener. Simmer until thick. |

Notes: | Just finished the last of the rice and tomato gravy from New Year's Day dinner. A tradition in Kevin's family is a southern style dinner on New Year's Day including black eyed peas for good luck.
The menu: Coked Ham Black eyed peas Collard greens Rice and tomato gravy Cornbread My favorite was the tomato gravy. I'm sure you can tweak it many different ways. I saw celery and ground pepper in the gravy I finished. I've also seen a recipe with green pepper. Pouring a can of Coke over a ham before cooking it in the oven makes the ham real juicy. Put slices on the top of the ham before pouring the Coke so it gets into the meat. |
