squash mushrooms root vegetables 2 Tbsp tomato paste salt & pepper crushed rosemary (Beware! red beets, which can colour everything.) |

Preparation: | Preheat oven to 350F - 400F (for more charred/done)
Cut into 1.5" to 2" pieces, mix with liberal amount of olive oil, the tomato paste and salt & pepper to taste. Season with crushed rosemary. Place on oiled baking pan and bake for 40 minutes or until desired doneness (turning once). |

Notes: | Serve alongside meat for a hearty winter meal, or as a meat-substitute for vegetarians. | ||
