Ingredients:2 tsp peanut oil
3-4 tsp ready-made Thai green curry paste (to taste)
2 cloves garlic
1-1/2 c coconut cream or regular coconut milk (depending on the thickness you prefer)
3 kaffir lime leaves
3 tsp fish sauce
2 tsp soy sauce
1 tsp shaved palm sugar or brown sugar
1 Tbsp chopped basil leaves
1 Tbsp chopped fresh cilantro leaves
Preparation:Finely chop or crush garlic.
Crush kaffir lime leaves.
Chop basil leaves.
Chop cilantro leaves.

Place curry paste, peanut oil and garlic into a wok or saucepan. Stir over medium heat until aromatic, about 2 minutes. Stir in thin coconut cream, lime leaves, fish sauce, soy sauce and sugar. Reduce heat to low and simmer for 10 minutes. Do not allow to boil. Remove from heat and stir in basil and cilantro.
