Ingredients:2 large sweet onions
2 large red onions
(about 8 cups of onions total)
olive oil
1/2 tsp fresh ground pepper
1/4 tsp salt
1/2 c dry sake/white wine
8 c beef broth
1/2 tsp thyme

nice bread, sour dough
Swiss cheese slices
Parmesian cheese
Preparation:Sliced & saute onions in olive oil until golden brown - about 20 minutes, stirring frequently.
Add fresh ground pepper and salt once onions start to soften.

Deglaze pan with dry sake (was going to be white wine but don't usually have any; sake, we had.)
Add beef broth & thyme.

Bring to a boil, cover & simmer for 2 hours.
I put in bowls, with nice bread & swiss cheese slices, sprinkled with parm. Broiled to melt cheese.
Notes:This was my first stab, and while it was alright, it lack a certain something. Advice?

What other seasonings are recommended here? This was passable, but lacked a richness.
