Ingredients: | 1-1/4 cups olive oil
2 onions, thinly sliced 3 large tomatoes (or the volumetric equivalent), roughly chopped 3-5 cloves garlic ( I use 4-5), thinly sliced 1 tsp chopped mint 1 tsp chopped dill 1 tsp celery leaves 1 tsp fresh parsley (I use quite a bit more - a "couple handfuls" on the manly meter) 1-1/4 cups water 6 whole white fish steaks - firmer is better. juice of 1 lemon salt/ground pepper/mint/dill/parsley to taste and for garnish |

Preparation: | Heat the oil in a large pan and toss in the onions. When they turn golden, add the tomatoes, garlic, dill, mint, celery leaves, and parsley with water. Simmer uncovered for about 25 minutes - reduce the liquid by about 1 third.
Add the fish steaks and cook for 10-12 minutes. The fish should be just barely cooked. Add the lemon juice, cover, and let stand for around 20 minutes before serving |

Notes: | Cod works great, as does halibut. Tilapia and the like probably wouldn't work. | ||
