Ingredients: | 3 qts Fresh green beans
3 cloves finely chopped garlic 1/4 c schezwan pickled vegetable (dry-pickled mustard root, or kim chee) 2 Tbsp dried shrimp or [pork foo something - a dried, shredded sweet/salty pork that comes in plastic qt containers) 1/2 c coarsely chopped green onions 2/3 c chicken broth 1/4 c rice vinegar 1/4 c soy sauce 2 Tbsp sugar |

Preparation: | Fry beans in wok or deep frying until skins wrinkle and turn bright green (1-2 minutes.) Drain in colander and rinse with warm water to remove extra oil.
Stir fry until fragrant : garlic, pickled vegetables. Add beans, shrimp/pork and green onions and warm. Add the final group of ingredients, heat through and p-i-g o-u-t. |
