Ingredients: | 6 c fresh corn kernels, divided
3/4 c milk 1/4 c butter 1/2 c prepared masa for tamales* 2/3 c sugar 3/4 c corn meal 3/4 tsp baking powder 3/4 tsp salt 1/4 c milk |

Preparation: | Preheat oven to 250.
Blend 3 cups corn kernels and milk in blender until smooth. Whip butter, masa and sugar together until light and fluffy. Add all ingredients, including pureed corn and remaining 3 cups kernels, and mix well. Pour the mix into a 9 x 13 pan. Cover tightly with foil and bake 1-1/2 to 2 hours, until the center tests to 175 and the mixture is set. Serve hot. |

Notes: | *Prepared masa can be bought from tortilla factories or mexican markets. If not available, rehydrated masa harina can be used.
This recipe is the only reason I go to Chevy's. |
