Ingredients: | 1-1/2 lb cold cooked pork, cut in 5/8" dice
2 Tbsp cornstarch mixed with 1/2 c soy sauce 1-1/2 c sugar 1/2 c vinegar 1 tsp salt 3 Tbsp cornstarch, mixed with 1-1/2 c water 1 Tbsp fresh ginger, chopped 1 green pepper or 1 1/2 mixed (red/yellow/green) peppers 1 can (8-12 oz) chunk pineapple 2 large tomatoes, each cut in 8 pieces |

Preparation: | Dip pork cubes in soy sauce mixture and fry in oil. Reserve.
Combine sugar, vinegar, salt, constarch mixture and ginger. Bring to boil, cook until clear. Add pepper, cook 2 minutes. Add pork, cook 3 minutes Add pineapple, cook 1 minute. Add tomatoes, remove from heat; serve with rice. |
