Ingredients: | 1 lb dry pinto beans
8 c water 2/3 c Pace picante sauce (spice level of your choosing) 1 small onion, chopped 2 cloves (maybe 3?) garlic, minced 1 Tbsp salt (but not quite a WHOLE Tbsp) 1/4 c butter |

Preparation: | Sort and wash beans. Saute onion and garlic in small amount of oil in a large soup pot. When they are translucent, add water, beans, picante sauce, and salt. Bring to a boil, reduce heat, and cover. Simmer 3-4 hours until beans are tender and easy to mash. Drain beans, reserving liquid. Return beans to pot, add butter and a couple of spoonfuls of extra picante sauce. Mash beans with a potato masher until you reach the consistancy you like. If beans are dry, add reserved cooking liquid. Season to taste and garnish with shredded cheese. | ||
Notes: | Leftover cooking liquid also makes and excellent soup base.
3-4 hours are totally worth it, and you don't have to pay attention to them, so you can go watch a movie or something and just set a timer. Mmmmm so good. |
